black bean chicken and rice

I put frozen chicken into the crock pot with salsa.
Cook till done.
I added the left over black beans from last night and stirred it together
I cooked rice on the stove and added it in.
I added one small can of diced chillis and tomatoes.

SO GOOD

chicken and black bean burrito

I combine a few recipes from a new site that a friend showed me....

first I made taco seasoning....
Add 1 teaspoons of dried onion
Add 2 teaspoons of chili powder.
Add 1 1/2 teaspoons of salt.
Add 1 teaspoon of garlic powder.
Add 1 teaspoon of cornstarch.
Add 1 teaspoon of ground cumin.
Add 1/2 to 1 teaspoon cayenne pepper or hot paprika.
Stir to blend.
Makes the equivalent of a 1 1/4-ounce package of taco seasoning mix.

I thawed some chicken and cut it into pieces
I tossed the chicken into a ziplock bag with the taco seasoning.
I preheated my cast iron with oil.
I fried the seasoned chicken.
I added water turned down the heat and let it simmer and finish cooking the chicken.
When the chicken was done I added a few teaspoons of corn starch to thicken the sauce.

I also make black beans in the crock pot the same day. When they where done I drained them. Put them in a large bowl and smashed them with a glass.
I grated some cheese....
Wheat tortillas and made burritos

This recipe was based off a soup recipe.... Brian liked the chicken a lot so I think I will make the soup and see how it goes.

Chicken & Stuffing Fatness

I have made this before but this is a new recipe. I have to say I like this one WAY better.
1 box (10 oz) of stuffing mix.
1/2 c of melted butter
1/2 c chicken broth
2 pounds chicken breast cooked and cubed
1 can of cream of mushroom soup
1 pk 9oz of frozen green beans thawed
8 oz sharp cheese grated

mix in a large bowl the first three items
for broth I buy a large tub at smart and final of chicken broth. It is concitrated so I melt it down into the needed amount of water. Also I in NO way used that much butter. So I upped the water so the stuffing was moist.

When ready put the stuffing in the bottom of a baking dish

Again in a large mixing bowl
Mix the last 4 items on the list.
Layer on top of the stuffing and bake covered for 45 mins.

Lasagna

in a skillet brown ground turkey....
Add 1 med can of tomato sauce
and 1 can tomato paste.
spice with oregano ect
In a small bowl mix ricotta cheese white cheese together.
layer meat cheeses and uncooked noodles repeat....
set on low all day
or high for 4 hours.

roast

I took a small roast.
I seared it with onion soup and oil in a cast iron skillet
when it was good and brown I added brown gravy mix and put a lid on it
I placed it in the oven. Cook till tender

Enchilada Goobers CP

Brown up ground meat -I use ground turkey-
with onion
garlic -very little-
1T chili powder
1T cilantro
a bit of salt
When browned add tomato sauce
and one can of cream of tomato soup
If you have it whole corn
let it set and warm

In your CP put tortilla on the bottom -I do two layers-
refried beans
meat and sauce
cheese
repeat
When done layering add olives on the top
cook on low till dinner time



Notes:::
I put this in the crock pot while the kids are napping or eating lunch so between 12-1p. After you have it put together cover and cook on low.
This is what I made normally when we have left over black beans. Put them in a shallow bowl and smash them up.
I have also used chili mixed with the refried beans if we didn't quite have enough beans.
Also you can use either corn wheat or flour tortillas.
This can be made in the oven. follow the instructions and layer it in a cooking dish.

I know this sounds really odd but at least try it! It is super good.

Beans CP

I made red beans
I use the rib bones from the dinner the night before and tossed them in.
Along with about 1/2 onion
salt
pepper
what was left of the mesquite sauce
cook all day on high.
about 30mins before dinner I shredded the rib meat and added it.

SO FREAKING GOOD!
